Flavour Profile
We only use free range, wild venison as our main-stay in these really down to earth sausages. Venison is such a joy to make small goods with. The connective tissue allows the sausage to be packed with a stunning gelatinous goodness! Just like a succulent lamb shank our venison sausage offers the same experience. We add a little pork and beef fat just to help the extremely lean venison in the cooking process. Made with natural hog casings, this is a top banger and extremely versatile.
