Flavour Profile
Without doubt, these are a taste of the wild side of New Zealand. Made using wild venison, these patties have a really rustic charm. Wild venison is an amazing product to work with and has an incredibly amazing texture, it’s just great for making patties. We add a little pork fat to the mix to help them in the cooking process so that they don’t dry out. Venison is fat free so a little fat is needed and also helps to round out the flavour. This is a gourmet pattie that really stands out from the crowd.
